🌊 Chef Sandra — 11 years later at Jean des Sables

11 years ago, Chef Sandra discovered Jean des Sables in Hossegor for the first time.

This week, she returned — once again as a guest — to rediscover the refinement and creativity of Chef Clément Pichard and his team.

The menu was a true journey between land and sea:
• Foie gras de Christian Pussacq, perfectly roasted with preserved lemon and smoked sorrel broth
• Filet de canard des Landes, rich and aromatic, served with potatoes, tarragon, and tangy shallots
• and the remarkable homard bleu fumé en éclade, a smoky, delicate interpretation of the ocean itself.

Every plate reflected balance, precision, and emotion — values that resonate deeply with Chef Sandra’s own culinary philosophy.

🇫🇷🥐 Chocolatine… not Pain au Chocolat! 😄

Down south in France, nobody calls it “pain au chocolat.” Here, it’s proudly la chocolatine — and that’s exactly what we serve at Cork&Fork every summer: real French chocolatines, buttery, flaky, and filled with two bars of rich dark chocolate. 🍫✨

Where does the name come from?
Many theories exist, but our favourite is the linguistic one: in French, words ending in -ine often describe sweet delights — nougatine, praline, galantine… so chocolatine simply means “a little chocolate treat.” 🥰
Elegant, simple, and oh so French! 🇫🇷

During our stay in southern France this fall, we had the chance to visit the world champion pâtissier of the chocolatine, right in the village where we’re staying. Watching him roll those golden layers reminded us why this pastry is pure morning happiness. ❤️

After seeing my mum again today, and now on the way to visit Steve’s parents, I was reminded of all the flavours and all the smells that formed me —
that shaped who I am and made me become Chef Sandra.

Not a Michelin star.
Not a five-course tasting menu.
Not a wine pairing.

Just a kitchen.
Your mum’s kitchen.

It’s where you first learned what food means.
Where you discovered comfort before you even knew the word.
Where the smell of onions sizzling in butter meant everything was okay.
Where a soup could cure sadness, and a hug came with dessert.

She fed you when you didn’t yet know hunger.
She seasoned your life before you knew what flavour was.
She formed your taste buds — and your heart — with every spoonful of love she stirred.

Every dish you’ll ever eat, no matter how fine or far away,
will always be compared — silently, unconsciously —

Tonight’s stop — Le Gonfalon, a beautiful hotel restaurant near Meaux, the birthplace of the legendary Brie de Meaux 🧀 — yes, the real one!

What an evening… An incredible menu featuring:
🥂 Foie gras with delicate accompaniments
🐟 Turbot perfectly cooked with a subtle herb crust
🍗 Ballotin de volaille filled with flavours of the French countryside
🧀 A magnificent chariot de fromages (cheese trolley!) — including, of course, that creamy Brie de Meaux
🍑 And for dessert, an elegant Mirabelle entremets that tasted like summer in Lorraine.

💡 Did you know? Brie de Meaux was crowned “the King of Cheeses” at the Congress of Vienna in 1815 — and it’s still made today using time-honoured methods dating back to Charlemagne’s era!

A true celebration of French terroir, craftsmanship, and inspiration — all to bring new ideas back to your plates next season at Cork&Fork. ❤️

👉 The Caribou RV Park Office & Store will remain open 7 days a week from 8:00 AM – 5:00 PM (closing one hour earlier than summer).
